Chickpea Salad Sandwich Recipe
Ingredients
1 cup Cooked chickpeas
1/2 Cooked potato
1/2 cup Cooked Quinoa
1/2 cup chopped Cilantro
1/2 cup chopped Red Bell Pepper
1/2 cup chopped Celery
1/2 cup chopped Red Onion
1/2 cup chopped Tomato
1/2 Lemon
1 tbsp. Liquid Aminos
1 cup Vegan Mayo or Vegan Yogurt
1 tbsp. Dijon Mustard
1 tbsp. Nutritional Yeast
1/2 tsp. Black Pepper
1 tsp. Onion Powder
1 tsp. Garlic Powder
1 tsp. Turmeric
1 tsp. Oregano
1 tbsp. Kelp Powder
Tortillas or Lavash
Directions
Mash the chickpeas and potatoes together in a bowl. Add all other ingredients, except the bread and lemon, and mix well. Add lemon to taste. Scoop a large amount of the mixture onto your tortilla or lavash, and roll into a sandwich. Enjoy!
